Shortcut Lemon Curd White Chocolate Chip Cookies

These lemon curd cookies are extremely easy & quick to make & are the perfect summertime treat!

Ingredients  

  • 1 Package Premade sugar cookie dough I like to use the break and bake type
  • 1 Jar Lemon curd I like Tiptree
  • 1 Cup White chocolate chips divide equally between each cookie If making single cookies use 5 - 7 chips per cookie, if making a quadruple cookie, use 15 - 20 per cookie
  • 3 Lemon Zest of three lemons divided equally between each cookie Use the large ones from the grocery store

Instructions 

  • Preheat the oven according to cookie dough package directions.
  • Take each cookie dough ball and roll 5 to 7 chocolate chips and divided lemon zest into each cookie dough ball.
  • Bake according to package directions.
  • Allow to cool.
  • Top each cookie with 2 tablespoons of lemon curd and chill in fridge for at least 2 hours.

Notes

If you are making quadruple decker cookies, use 4 break and bake cookie dough balls, 15 - 20 white chocolate chips and divide the lemon zest equally between each quadruple decker cookie. Assemble and prepare as directed above. Top each cookie with 4 to 6 tablespoons of lemon curd and chill for at least 2 hours. Bake at the same temperature, but add 5 minutes of bake time.
