How to Make Candied Lemons

These candied lemons are so easy to make & great for garnishing desserts & cocktails!

Ingredients  

  • 4 Lemons
  • 2 C Water
  • 2 C Sugar

Instructions 

  • Slice lemons 1/4" to 1/2" thick.
  • Bring a separate pot of water to a boil.
  • While waiting for water to boil, make an ice bath to soak the lemons in after boiling.
  • Place lemons in boiling water for one minute.
  • Using tongs place lemons in the ice bath.
  • Allow lemons to completely cool.
  • Repeat the boiling and ice bath process 3 times, replacing the water in the pot each time.
  • Add sugar and the 2 cups of water to a pot and bring to a boil.
  • Once sugar is completely dissolved, add lemons to the sugar water mixture. The lemons will probably cool the mixture so that it is no longer boiling.
  • Bring the sugar and water mixture back to a boil and turn it down and allow to simmer for 20 to 30 minutes or until the rinds on the lemons become translucent. You will know it when you see it.
  • Remove lemons from sugar mixture with tongs and place on a cooling rack (lined with a cookie sheet to catch the sugar drips). Allow lemons to cool completely.
  • You can roll the lemons in sugar or leave them looking glassy.
  • The lemons are now ready to use in your recipes, cocktails or whatever creative idea you have for them!
