Shortcut Lemon Curd White Chocolate Chip Cookies
I can show you how to make shredded chicken breast taste just like a fresh rotisserie chicken, I can teach you to make mind blowing alfredo and I can make a spaghetti sauce that’ll make you want to cry for joy. Those are actually some of my easier recipes, but typically you won’t find me cooking over a hot stove. You will find me jumping up from painting a project or writing a story, to quickly throwing some ingredients in the pan to make a last minute dinner before my husband walks in the door. I make sure whatever I make is delicious, but it’s almost always last minute. If I don’t have much time to dedicate to making dinner, I certainly don’t have that time for making desserts but I’m going to have dessert!
Just like I need a good meal at least several times a week, I need a good dessert too. There are some non-staple, staple items that I keep in my house to make my life easier and more abundant. One of those non-staple, staple items is Pillsbury break and bake sugar cookies. They’re delish without doing a thing to them and they’re soft every single time. Who wants just a sugar cookie though, when you could have a showstopper cookie? Not only are we going to spice up these sugar cookies, but we’re going to make GIANT lemon curd cookies!
For this recipe, I rolled 4 break and bake cookies into one huge cookie dough ball and added white chocolate chips, lemon zest and lemon curd, to create this summertime treat. Every cookie turned out perfectly soft and chewy with a nice balance of sweet and tart. What’s even better about this recipe, is that you can simply make one cookie, a giant cookie or a whole batch of cookies. These are a chilled cookie, making them even more fitting to enjoy during the hot summer months!
If you make these for a party, you might consider making them with just one break and bake cookie, unless you’re making them to completely “wow” your guests. These zesty cookies are a perfect summertime treat and they’re great for BBQs, baby showers, pool parties and more!
Shortcut Lemon Curd White Chocolate Chip Cookies
Ingredients
- 1 Package Premade sugar cookie dough I like to use the break and bake type
- 1 Jar Lemon curd I like Tiptree
- 1 Cup White chocolate chips divide equally between each cookie If making single cookies use 5 – 7 chips per cookie, if making a quadruple cookie, use 15 – 20 per cookie
- 3 Lemon Zest of three lemons divided equally between each cookie Use the large ones from the grocery store
Instructions
- Preheat the oven according to cookie dough package directions.
- Take each cookie dough ball and roll 5 to 7 chocolate chips and divided lemon zest into each cookie dough ball.
- Bake according to package directions.
- Allow to cool.
- Top each cookie with 2 tablespoons of lemon curd and chill in fridge for at least 2 hours.
