Pineapple Freeze Dole Whip x Taco Bell Copycat Recipe

All year long my mouth waters for a frozen pineapple drink, in fact it might be one of my favorite fruity treats. During Covid I stopped into Taco Bell, more like I whipped through the drive-thru in my big truck, my mask pulling uncomfortably at my ears, intent on grabbing one of their pineapple freezes. As luck would have it, it was happy hour and I scored that drink for a buck, only after awkwardly handing my card under the plexiglass screen. Holy moly, that thing was good!

It’s been almost three years now and I haven’t been lucky enough to get another. I’ve checked their app at least 100 times to no avail. I got tired of waiting. There’s a number of recipes for pineapple drinks all over the internet, but none were quite what I was looking for. With a tally-ho, I headed to the store to grab some ingredients and get to experimenting! Most of the ingredients are easy to find at any grocery store with the exception of the citric acid, which I ordered online. You can find cream of coconut in the cocktail section, it often comes in a skinny can but if you can find the squeezy bottle kind, it has a longer fridge life.

I’ll be honest, I’ve never actually had a Dole Whip. I’ve heard about them, I’ve dreamed about them, I’ve walked past Disney carts full of them, but I’ve never actually had one. I have, however, had a Taco Bell pineapple freeze, and this drink I believe falls somewhere between both drink / whippy goodness. This is a tart drink, but to give it a little bit of random sweetness, you can add white chocolate chips, but they’re totally optional. I am not unlike Goldilocks, so I have made this quite a few times, adjusting things to get it just right. Easy is always better, so if you have a store bought frozen pineapple that you like, grab that, but I highly recommend cutting up and freezing a fresh pineapple. This is a great recipe to share with a friend and you will probably need a paper umbrella because, paper umbrellas! Oh, and straws, you definitely need straws!

Notes

This works well with store bought frozen pineapple, BUT I promise this recipe is so much better with fresh pineapple that you freeze yourself. If you use fresh pineapple, you probably won’t need any citric acid.
